Paleo snacks – Choc chip cookies

Sometimes we all need a little snack. Something to remind us that we still can have a bit of the modern diet but without totally breaking down into a gluten filled shame eating spiral. That’s where these cookies come in. Easy to make and very easy to eat, they’ll help you get through your bakery cravings. Enjoy.

PALEO (CHOC CHIP) COOKIES

Ingredients:

200gm Almond Meal

75gm Desiccated Coconut

1 Teaspoon of Baking Powder

1/2 cup of Macadamia oil

2-3 Tablespoons of Honey

25-50gm Dark Chocolate chopped into chunks

Method:

Pre heat oven to 150 degrees celcius

In a bowl mix Almond Meal, Coconut and baking powder. In a separate bowl mix (as best you can) the honey and the Macadamia oil. Pour the Oil/Honey mix into the Meal and mix with a spoon or knead with your hands until the mixture is slightly moist and can hold together (like cookie dough). Add in the Chocolate and mix through.

Roll palm sized portions of the dough into balls then squash them between your hands to flatten into a cookie shape. Place cookies on grease paper on a tray and bake in oven for approx. 15 mins or until golden brown. Take out of oven and allow cookies to cool for 15 minutes.
